Standard Header - Bag / cart icon

If you don't want the icon to appear, you can deactivate WooCommerce if you aren't using it and it will hide the shopping cart.

If you are using WooCommerce, you'll see some settings under Appearance > Customize > Theme Options > Cart / WooCommerce. There you can select between different options, or hide the icon.
